Ingredients:
- Chicken Breast
- Fajita/Taco Seasoning
- Jar Salsa
Directions:
- Put chicken breast in the bottom on a crock pot in one single layer.
- Season with Taco/Fajita/Jerk seasoning.
- Cover with salsa.
- Add another layer of chicken breast on top (if using lots if chicken) and repeat with seasoning and salsa.
- Put top on and cook on high for 3.5-4 hrs then shred!
Ways to eat it:
- Brown rice bowl with sautéed peppers & onion, steamed spinach, 2-3 T corn, with lime & garlic, 1/2 avocado, salsa, 1 wedge laughing cow pepper jack cheese
- Cauliflower rice bowl with 1/3 cup black beans and above veggies
- Roasted Sweet Potatoes seasoned with garlic, salt, paprika, roasted at 425 for 20 min – salsa chicken – roasted buffalo cauliflower (cauliflower seasoned with salt, garlic powder, tossed in buffalo sauce & roasted at 425 for 18 min)
- Roasted Butternut Squash seasoned with garlic, salt, paprika, roasted at 425 for 20 min – salsa chicken – 1/3 c black beans, roasted garlic lemon broccoli

- Buffalo Chicken Wrap
- Buffalo Chicken Salad (roasted butternut squash, 2 T black beans, 2 T corn, salsa, avocado, Bolthouse farms ranch dressing, lemon)
- Buffalo Chicken Pizza using Flatout Wrap or Joseph’s Pita as the crust with fat free mozz & Bolthouse farms ranch dressing
