45 min Roasted Chicken

This is the best roasted chicken recipe because it is done in just 45-50 minutes without you having to do much of anything! I do recommend the Spatchcock method because it creates a more evenly cooked chicken & allows the chicken to cook faster. It is SO EASY to spatchcock a chicken, don’t be intimidated – watch this short video HERE


  • Whole Chicken
  • 1 Tbsp Olive or Avocado Oil
  • 1 Tbsp Onion Powder
  • 1 tsp Cumin
  • 1 Tbsp Salt


  • Preheat oven to 425
  • Spatchcock the chicken (video)
  • Make sure chicken is patted dry
  • Combine onion powder, cumin & salt in a small bowl
  • Drizzle 1 Tbsp oil over the chicken & rub the seasoning into the chicken
  • Line a baking sheet with foil *if you have a wire rack, put the rack on the baking sheet but if you don’t have on its okay* Put the chicken on the baking sheet & into the oven thighs first on the middle rack
  • Roast for 45-50 minutes, then let rest for 15-20
  • Once rested, separate the thighs, wings then breast. Save the bones for bone broth!
