Perfect for Meal Prep Breakfast Taco Bowls
Serves 4-5 or makes 4-5 containers for meal prep
Ingredients:
- Yukon gold potatoes
- 3 bell peppers – sliced
- 1 large onion – sliced
- 2 bags Spinach
- 99/1 ground turkey
- 12 Eggs
- Salsa
- Paperback laughing cow
- Paprika
- Cumin
- Garlic powder
- Elote seasoning (Trader Joe’s or order on amazon)
- Salt
Directions:
- Preheat oven to 425
- Season potatoes with paprika, cumin, garlic powder, salt & roast for 18 min. Sprinkle with more salt. Set aside
- Sauté peppers & onions with salt, garlic and elote seasoning for 5 min on Med high heat. Set aside
- After peppers & onions are done, wilt spinach in a pan, season with salt & garlic powder
- Brown turkey in a pan on Med high heat and season with paprika, cumin, garlic powder, salt. Remove from heat when fully cooked
- After turkey is cooked, scramble the eggs with salt & elote seasoning
- Assembly for meal prep: in a container layer the turkey, eggs, peppers & onions, spinach. When you’re ready to eat crumble the laughing cow cheese wedge over everything & top with salsa
- If not meal prepping, put everything in a bowl and enjoy!
