White Garlic Mushroom Pizza (gluten free!)

THIS WAS SO GOOD!!!!!! There is an extra step that makes all the difference, and that is roasting your own garlic! You can skip this step but its so easy and takes this recipe to another level!

Ingredients:

  • Garlic Bulb
  • Cauliflower Pizza Crust (i love the Trader Joes crust but this is a great one too!
  • 1 Cup Sliced Mushrooms
  • 2 Shallots – sliced
  • Handful of Baby Spinach
  • Mozzarella Cheese (i used the Diary Free Trader Joes Almond Mozz – SO GOOD
  • Dried Oregano
  • Salt
  • Red Pepper Flakes *optional*

Directions:

  • ROASTED GARLIC: Preheat oven to 425. Remove the loose papery skin from the garlic and cut the top exposing the garlic cloves. Place on foil, drizzle with 1 Tbsp olive oil, wrap up the foil and roast for 40 minutes. Let cool
  • PIZZA: Preheat oven to package directions. Cook plain crust according to directions (the TJ crust I used requires you to cook it upside down for 12 min, flip and cook another 10 min before adding toppings)
  • While the crust is defrosting/cooking, preheat a pan on your stove to med high heat with 1 Tbsp olive oil. Once pan is heated, add sliced mushrooms and shallots with a 1/2 tsp salt. Cook for 4-5 min.
  • Add 1 tsp dried oregano, sprinkle of red pepper flakes if using and add 1 big handful of baby spinach.
  • Stirring to wilt the spinach, add 1/2 tsp salt and remove from heat when spinach is almost all wilted. *taking the spinach off the heat before it is completely wilted will help it not get too watery!
  • TOPPINGS: When crust is ready, remove 4-5 garlic cloves with a butter knife from your roasted garlic clove and spread on the crust as if you are buttering a piece of toast. This is your “sauce” (so good omg)
  • Then add a thin layer of cheese, using your hands sprinkle the mushroom mixture all over the pizza and top with another thin layer of cheese!
  • Put back in the oven under broil and melt cheese – about 1-2 minute but please watch the pizza so it doesn’t burn! *you can do this on low broil or 425-450 degrees. ENJOY!
