Western Omelet – High Protein!

Are you eating enough protein? Protein is what my clients struggle with the most. A high protein diet helps you stay full and satisfied which really helps with craving and snacking. A tip i gave one of my clients was to make my low fat western omelet!

Ingredients:

  • 3 egg whites
  • 1 whole egg
  • 1-2 T diced onion
  • 1-2 T diced bell peppers
  • 1/8 cup mushrooms
  • 2 slices Canadian bacon chopped
  • Salt & your fav seasoning

Directions:

•Preheat oven to high broil
•Preheat pan on med heat
•Spray with cooking spray and add veggies. Let cook and brown a little, about 3-5 min.
•Add Canadian bacon and cook for another 1-2 min browning all sides, stirring.
•Whisk eggs, spray pan & veggies with cooking spray and add eggs
•Season everything like there is no tomorrow
•Using a rubber spatula, move the cooked edges of the eggs while tipping your pan so the uncooked eggs on top and fall on to the pan.
•Transfer to the oven for 2-3 min or until eggs are cooked
•If using cheese, sprinkle on top, food eggs over to make the perfect omelet shape (i tried getting fancy and flipped my eggs…and it turned into a scramble but THATS OKAY! Still tastes bomb!!)
•Toast a piece of sprouted wheat bread, top with ghee, jam or butter spray!
