High Protein Vegan Tacos – Soy & Gluten Free!

We have tacos every single week for dinner because they are just so easy to put together! Here is my favorite high protein plant based taco recipe with instructions below for adding meat!


  • 1/2 container Baby Bella Mushrooms – chopped
  • 1/2 onion or 1 large shallot – chopped
  • 1 Red Bell Pepper – chopped
  • 2 Garlic gloves – minced
  • Longeve Pea Crumbles
  • 1/2 cup Black Beans – drained
  • Handful of Kale
  • Cassava Flour Tortillas (gluten free option)
  • Taco Sauce
  • Cumin, Smoked Paprika, Elote Seasoning (or just taco seasoning)
  • Lime juiced
  • *optional: vegan cheese sauce (Chipotle Bitchin’ Sauce from Target is what I used), jalapeños, fresh cilantro, shredded lettuce, salsa, avocado/guac, plain vegan yogurt for sour cream substitute


  • Prepare pea crumbles according to back of package (so easy, just cover with 3/4 water & wait 5 min). Set aside.
  • Heat a pan on med-high heat, add 1 Tbsp Avocado Oil & when warm add mushrooms, onion/shallot & bell pepper with a pinch of salt.
  • Stir & cook about 3-4 min then add garlic & a heavy sprinkle of Elote , 1 tsp of cumin & paprika (or just add 1-2 Tbsp taco seasoning.)
  • Stir & cook for 1-2 minutes, not letting the garlic burn.
  • Add a large handful of kale & black beans, stir to wilt kale – about 2 min. Remove veggies from the heat into a separate bowl.
  • In the same pan you used for the veggies, on med high heat add 1 Tbsp avocado oil & pea crumbles. Stir, browning the pea crumbles for 1-2 min, then add about 2 Tbsp taco sauce & your seasoning (Elote, cumin, paprika – swipe to see a visual).
  • Add 1 tsp of salt & a handful of chopped cilantro *if using* to the veggies and another tsp salt to the pea crumbles.
  • Squeeze Lime juice on both veggies & crumbles
  • I don’t mix the veggies and crumbles together because Brian was having ground beef and I needed this separate. I like it this way so I can control how much protein I am getting in each taco
  • Warm tortillas under the broiler & top with veggies, crumbles, jalapeños, salsa, cheese sauce & any other toppings you like.
  • Meat Option: Cook lean ground beef on the stove top & add same seasonings as I did to the Pea Crumbles
