Roasted Veggie Salad

Ingredients:

Bag of cauliflower or head cut into florets

Spring Mix

1 Chicken Breast

2 small vine Tomatoes

2 mini seedless cucumbers

3 mini Beets (these are my favorite!)

2 TBSP Salsa

2 TBSP Primal Foods Avocado Oil Cilantro Lime Dressing

½ lemon juiced

Curry Powder

Salt
South African Smoke Seasoning

 

Directions:

Preheat oven to 400. Lay cauliflower florets on a lined baking sheet, spray with cooking spray and season with salt & curry powder. Bake for 15-17minutes or until fork tender. Set aside to cool

 

Assemble Salad:

In a large container add 2 large handfuls of spring mix, add the dressing, put the top on your container and shake to mix dressing all over greens. 

Slice tomatoes, cucumbers & beets and add to the spring mix. Add salsa and lemon juice, sprinkle with salt & African Smoke Seasoning, put top on container and shake again. Place salad into a large bowl and top with sliced chicken breast.
