Pumpkin Snacking Bread

Ingredients:

1 Cup Pumpkin Puree

1 spotty banana

1 whole egg

2 egg whites

1/4c Cashew Butter

2 Tbsp Maple Syrup

1 tsp vanilla extract

½ Cup Coconut Flour

2 TBSP Flax Meal *I use a flax meal & chia seed blend from vitamin shop

1 tsp baking powder

½ Tbsp cinnamon

1 tsp pumpkin spice

½ tsp salt

Topping:

¼ cup walnuts chopped

Stevia & Cinnamon

 

Directions: 

Preheat oven to 350.

In a large bowl bash the banana, add in the pumpkin and mix it together.

In a separate bowl whisk egg & egg whites together then add the rest of the wet ingredients.

Mix wet & dry ingredients together and when it is fully mixed add the batter to a bread pan coated in coconut oil spray.

Top with chopped walnuts and sprinkle the top with cinnamon and stevia

Bake for 45 minutes

Let cool for 20 minutes, cut into slices and enjoy for breakfast, a snack or after dinner treat!
