Ingredients:
1 serving Kodiak Cake pancake mix
40g Jimmy dean turkey crumbles
Sugar Free Syrup Syrup
2.5oz Egg whites
20g Almond mozzarella cheese (vegan from TJ’s or you can use a velveeta slice)
15g Raspberry Jam (I love this salty seeet combo)
Ring mold (to make a perfect circle for eggs and pancakes which I found on amazon/target)
Directions:
Make pancakes in a bowl according to package directions.
In a separate bowl, mix the turkey crumbles with 2 tbsp maple syrup.
Put a pan on med heat, add ring mold to the pan and spray with cooking spray. Add egg whites and cover, cooking for 3-5 min or until toothpick comes out clean.
Once the eggs are done, set aside and cook the pancakes in the ring mold but as soon as you add the batter, add ½ of your maple turkey crumbles on top and kinda push down so they sink into the pancake.
Cook until it’s set (1-2 min) then flip.
The first side of the pancake will cook longer bc you want it to sear and be a little hard like a bun, then when you flip it, it only needs to cook for like 30-40 sec.
When pancakes are done, spread jam on each and top with your egg and cheese then melt the cheese for a min under high broil.
