Banana Blueberry Chia Pancakes

Ingredients:

45g Oats – blended into flour

1/2 (brownish) Banana – Mashed

1-2 Scoop collagen peptides (20g protein)

1 Whole Egg

1 Egg White

1/2 cup blueberries

1tsp vanilla extract

1/2tsp baking powder

dash of stevia

pinch of pink salt

Lots of cinnamon

1Tbsp Chia Seeds

1/4 cup sugar free syrup

 

Directions

Mix dry ingredients together (oat flour, collagen peptides, baking powder, cinnamon, stevia)

Mix wet ingredients together (egg and white, mashed banana, vanilla extract)

Mix wet and dry ingredients together then add 1/4 cup blueberries

 

Preheat pan to medium, spray with cooking spray and add about 1/4 cup of the batter at a time to make small pancakes.

 

While your pancakes are cooking, heat your syrup in a small pot with the rest of your blueberries and chia seeds on low heat.

 

When pancakes are done, mash blueberries in the syrup, pour over your stack and enjoy!
