Pizza & Fajita Stuffed Mushrooms

This is a great low-calorie appetizer for any football Sunday! Try both types and let me know which one you prefer! 

Pizza Stuffed Mushrooms Ingredients:

  • Whole white mushrooms – cleaned stems removed
  • Pasta/pizza sauce
  • Turkey pepperoni
  • Low Fat Mozz
  • Eat Clean tomato basil
  • Salt

 

Fajita Stuffed Mushrooms Ingredients:

  • Whole white mushrooms – cleaned stems removed
  • Taco sauce/Enchilada sauce
  • Diced bell peppers
  • 1 Laughing Cow Pepper jack Wedge
  • Chili Lime or Taco seasoning

 

Directions:

  1. Preheat oven to 375
  2. Clean and take the stem off mushrooms. For the pizza shrooms, fill caps with sauce, sprinkle the top with cheese, season with tomato basil seasoning (or oregano & garlic powder) and salt. Top each with a turkey pepperoni slice.
  3. For the fajita shrooms, fill caps with taco/enchilada sauce, top with diced peppers, season with Trader Joes chili lime OR taco seasoning and salt. Cut 1 Laughing Cow Cheese Wedge into little chunks and top each shroom with the cheese.
  4. Bake for 15 minutes
  5. Let cool for 5 minutes and dig in!!
