Hummus Crusted Chicken!


This is a great weeknight dinner or meal prep recipe because everything cooks in one pan!


  • Chicken Breast
  • Hummus (I used garlic hummus)
  • Zucchini (you can you any veggies, broccoli, cauliflower, asparagus, brussels sprouts, potatoes)
  • Bread Crumbs *optional*
  • Lemon
  • Salt, Pepper, Paprika


  • Preheat oven to 450.
  • Cut veggies and put them on the bottom of your baking dish. Spray veggies with cooking spray or drizzle a little oil over the top. Toss and season with salt, pepper, and paprika.
  • Season chicken generously with salt and pepper.
  • Spread a layer of hummus on the chicken, sprinkle with bread crumbs *optional* and place chicken breast on top of veggies.
  • Squeeze lemon juice over the top of everything.
  • Roast at 450 for 25-30 min depending on the size of your chicken breast. Enjoy!
