Chicken Rollatini

This recipe is a perfect meal prepped lunch OR a quick and easy dinner! You wanted to see different ways to prepare chicken and new lunch ideas, you are going to love my Chicken Rollatini!

Ingredients:

  • Thinly Sliced Chicken Breast – Pounded Thin
  • Sun Dried Tomatoes – Roughly Chopped (try to get the ones NOT packed in oil to save calories
  • Fresh Basil – Roughly Chopped
  • Low Fat Mozzarella Cheese
  • Salt & Everything Seasoning
  • Toothpicks

Directions:


  • Pre-heat your oven to 400.
  • Pound chicken breast thin. Season with salt and everything seasoning on both sides.
  • Place your chopped basil, sundried tomatoes and mozzarella at the bottom of the chicken breast, roll up and secure with toothpicks.
  • Spray the outside of the chicken with cooking spray and bake for 20-30 minutes depending on the size of your chicken.
Let cool for 5-10 minutes, remove toothpicks & slice! Enjoy!
