Egg White Omelet Cups

I LOVE this easy grab and go breakfast because they are totally customizable! You can put anything inside your egg white omelet cups and keep your breakfast new and exciting each week!

Roasted Red Pepper & Feta Egg White Omelet Cups

 Makes 6 Egg Cups
1 Egg Cup:  64 Calories P12/F0/C3

Ingredients:

  • Liquid Egg Whites
  • 180 Deli Sliced Roasted Red Peppers
  • 60g Fat Free Feta Cheese
  • Cooking Spray
  • Muffin Tin

Directions:

  • Pre-Heat Oven to 350. Spray muffin tins with cooking spray.
  • Evenly distribute roasted red peppers & feta into the bottom of your muffin tin.
  • Top each muffin tin with liquid egg whites. 90g Liquid egg whites in each tin or you can simply pour the egg whites into the muffin tin.
  • Bake in a 350 oven for 30 minutes.
  • To test if they are done, insert a tooth pick into the egg cups and if the tooth pick comes out clean, they are done!
  • Store in your fridge & grab 2 in the morning on your way out the door!

Sausage & Pepper White Omelet Cups

 Makes 6 Egg Cups
1 Egg Cup:  75 Calories P13/F1/C2

Ingredients:

  • Liquid Egg Whites
  • 120g Frozen Tri Colored Peppers
  • 90g Jimmy Jean Turkey Sausage Crumbles
  • Cooking Spray
  • Muffin Tin

Directions:

  • Pre-Heat Oven to 350.
  • Spray muffin tins with cooking spray.
  • Evenly sausage & peppers into the bottom of your muffin tin.
  • Top each muffin tin with liquid egg whites. 90g Liquid egg whites in each tin or you can simply pour the egg whites into the muffin tin.
  • Bake in a 350 oven for 30 minutes
  • To test if they are done, insert a tooth pick into the egg cups and if the tooth pick comes out clean, they are done!
  • Store in your fridge & grab 2 in the morning on your way out the door!
