Mac & Cheese is such a comforting and nostalgic meal but boy can it pack on the calories. You will be shocked at how amazing my Cauliflower Mac & Cheese is, you really wont miss the Macaroni!!
Ingredients:
I head cauliflower
2oz Whipped Cream Cheese
1 TBSP yellow mustard
1 cup Lite Shredded Cheese + 1/2 c reserved for topping (I used a light cheese blend from Trader Joe’s)
1 TBSP Heavy Cream
Garlic powder
Salt and Pepper
Directions:
Put a large pot of water on your stove to boil.
Cut florets off cauliflower & boil until soft, about 10 minutes.
Drain Cauliflower and return to warm pot. Add 1 cup of cheese, cream cheese and heacy cream – stir.
Add mustard, garlic powder, salt and pepper to taste.
Add mixture to baking dish, top with remaining 1/2 cup cheese, salt and pepper.
Bake at 450 for 10 min. Finish with a low broil for 2-3 minutes for a golden brown crust!

You can cook up a few slices of bacon to crumble on top of your Mac & Cheese!
