I’m totally obsessed with this dish. OBSESSED! I make this for my weekly meal prep and look forward to it every day. You can change this Hash up in so many ways to change the flavor whenever you get bored!
Let’s start with the base. Sweet Potatoes and/or Butternut Squash. If you are looking for a lower carb option, go for the Butternut Squash. If you don’t like Butternut Squash, Spaghetti Squash is another fantastic low carb option. For moderately low carbs you can mix Butternut Squash and Sweet Potatoes. If you want a higher carb meal, Sweet Potatoes as the base is perfect!
For the Squash/Sweet Potato:
Preheat oven to 450. Season the squash and/or sweet potatoes with fajita or taco seasoning, paprika, garlic powder, and salt. Roast the squash for 20-25 minutes and the sweet potatoes for 25-30.

Add Black Beans

Add Pico De Gallo

Mix

Crumble Laughing Cow Cheese over the top

Top with Crock Pot Salsa Chicken (or steak, ground beef or ground turkey)

If you are making this ahead of time, put the top on your container and bring BoltHouse Farms Cilantro Avocado Dressing and Guacamole on the side. When you are ready to eat, heat this up in the microwave then drizzle the Cilantro Avocado dressing and hot sauce (optional) over the top and add Guacamole.

Ingredients:

- Pico De Gallo
- Laughing Cow Pepper Jack Cheese
- Crock Pot Salsa Chicken (can also use steak, ground beef or ground turkey)

- Guacamole
Directions:
For Sweet Potatoes and/or Butternut Squash:
- Preheat oven to 450.

For Crock Pot Salsa Chicken:
- Layer chicken breast in crock pot.
- Season generously with taco or fajita seasoning and Jerk seasoning.
- Cover with salsa.
- Cook on high for 4 hours or low for 6 hours.
Mexican Hash Assembly:
- First, add squash and/or sweet potatoes.
- Top with beans and Pico de Gallo.
- Mix.
- Crumble Laughing Cow Cheese on top.
- Top with meat.
- When you are ready to eat, drizzle 1 serving (30g) of BoltHouse Farms Cilantro Avocado Dressing and top with pre-made Guacamole or mashed avocado with salt & lemon!
This dish is totally customizable! Things you can add:
- Shredded lettuce
- Jalapeños
- Shredded Mexican Cheese (full fat, fat-free or reduced fat)
- Sour Cream (reduced fat or substitute plain greek yogurt)
- Frozen Corn (I love Trader Joes Frozen Roasted Corn in this!)
